New Vegan, gluten free dinner!

Great dinner tonight inspired by one of my favorite vlogger Pick-up-Limes

Her Pix of everything looks so much better then mine... and also she does some extra things such as baby spinach and a golden glow sauce to top it off


So mine was a quick meal for the night

2 cups brussel 
sweet potato
1 cup pecans
Quarter onion
Olive oil
Salt
Pepper
1 Tablespoon minced garlic
1 cup Red Quinoa
1/4 cup Dried Cranberry's


Peel and cube the sweet potato 


Cut the ends off the brussel sprout, toss the outer leaves and cut in half


I always keep all my peelings for my worm compost


slice your onion, add your garlic, salt, pepper and olive oil and toss in the bowl


Roast in a 350' oven for 45 minutes, top it off with some cooked quinoa and yummy!!!
